Winemaker Tasting Notes



 



Aroma - Complex and intense nose displaying plum, blackberry, hints of liquorice, black olive and mild smokiness.



Palate - Full bodied and structural palate with dark fruits and spice showing through. Balanced lively acid and velvety tannins are integrated seamlessly with spicy oak with a hint of light smokiness. Brilliant length and weight.



Winemaking - De-stemmed to a combination of open and static fermenters, Left on skins for between 6-8 days and pumped over 2-3 times per day. Pressed off skins with a small portion going to oak to finish secondary fermentation. The remaining completing MLF in stainless. Aged for 12 months on French Oak before bottling.



Vineyards - Selected from multiple sites through the McLaren Vale region, each displaying a unique site character which integrate well to form the final blend. Willunga area offers fruit with dark berries and hints of fennel with chewy tannins while McLaren Flat offers for lifter floral notes and finer tannins.
