Majella Cabernet Sauvignon

What more can we say about the Majella Cabernet? Universally regarded as one of Coonawarra's greatest wines, it continues to win trophies and medals throughout Australia and the world. Dark red in colour, with a very complex nose with hints of blackberries and ripe cherries. This complexity carries over to the palate, rich, juicy and ribena-like, with plums and fruitcake characters showing through. As ever the finish is long and lingering with wonderful 'soft grain' tannins. Drink now or wait 10 - 15 years. In the usual Majella manner the ferment was finished off in 300 litre French oak barrels. After MLF the wine was aged for a further 18 months in oak before bottling.

Majella Shiraz

The Majella Shiraz first appeared in 1991 and has since acquired a reputation as one of Coonawarra's finest Shiraz's. A deep ruby red colour with a bright damson hue. fragrant ripe dark red fruits with vanillin aromas. A supple palate with luscious dark berries and dark chocolate with touches of clove, cinnamon and black pepper. Fine textured tannins lead to a long and evenly balanced finish. As is usual here at Majella the fermentation was completed in 300 litre barrels and the wine was then aged for a further 18 months in a blend of French and American oak. We present it as a great example of Coonawarra Shiraz at its very best. Ageing potential: 5 - 10 years.

It’s a flagship wine that’s easy enough to enjoy now, or much later. Blackberry, dark cherry, cloves, sage, coconut, dark mint chocolate, spice – it’s all go. Full bodied, lush smooth tannin, silky feel with rich fruit, backed with toasty spiced oak. Smooth powdery tannin carries the finish long, and while there’s a little warmth, the whole is greater than the sum of its parts. Does that make sense? Well, at least it sounds impressive. Ministry Of Clouds Shiraz

Includes 20% whole bunch with maturation taking place in old French oak barriques for 11 months. Totally opaque inky black core with a dark crimson black hue. Nosing delivers a perfumed sniff of liquorice and blackberries infused with violets followed by dark plum, vanillin cedar and some spearmint. Medium to full bodied with abundant richness yet a refined sleekly textured mouthfeel the palate possesses flavours of liquorice, dark chocolate and blackberries intermixed with some earthy dried meat characters and vanillin oak. Slightly dryish on the finish with very fine grained verging on velvet like tannins. Aftertaste of dark chocolate, blackberries, subtle liquorice, earth and vanillin cedar. Cellar 5-6 years. Alc 14.1%

Mitolo Serpico Cabernet Sauvignon

This isn’t just any Cabernet Sauvignon. With our Serpico, we do things a little bit differently; we follow the traditional Italian technique of drying the grapes to produce an Amarone style wine. When Frank Mitolo decided to introduce a Cabernet into his premium ‘Mitolo’ range, he was prepared to go against the grain, and produce a unique wine style in Australia. Much like the man the wine is named after, Frank Serpico who went against all odds to expose an immense depth of corruption in the New York police force.

Mitolo Jester Cabernet Sauvignon

Bright and fresh with signature Cabernet Sauvignon characteristics of red capsicum, menthol, violet and mixed herbs. Full bodied and mouth filling with juicy red cherry, blackcurrant and cassis, intertwined with savoury dark chocolate and tobacco. The Amarone component adds to a textured finish with great length and savoury tannin

Mitolo Jester Shiraz

A lot of love goes into our wines, and our Jester Shiraz is no exception. The vineyards for the Jester Shiraz are located at the southern end of McLaren Vale, close to the seaside town of Aldinga. The combination of cool sea breezes and gully winds provide ideal conditions for growing fruit of intensity and balance. The vines sit in heavy clay, which gives the wine powerful dark fruit flavours. Ideal conditions in 2014 produced an exceptional Shiraz that speaks of its origin. Full flavoured, with dark fruits and savoury black olive characters, and soft, silky tannins.

Yal Yal Road Pinot Noir

A very aromatic, bright and complex wine in which raspberry, strawberry and red cherry flavours predominate. The long palate is rich and textured and the tannins tight and balanced. Alcohol: 13.5%

Rymill The Surveyor Cabernet Sauvignon

The nose has complex layers of dark cherries, cassis, mocha and mint chocolate. As promised by its appearance, the wine is intense yet bright and generous in its complexity of flavours, with plums, star anise and fennel seed. The voluptuous middle palate, abundant in fruit and elegantly structured by the oak and tannins, offers to linger in a long, convincing after taste. Enjoy this wine on its own, or with food but careful cellaring for ten to twenty years will reward those with patience. Haliday says: ‘As compelling as it is commanding. It would be brutish if it wasn't so svelte. Blackcurrant, black olive, loganberry and fresh mint notes rush through to the two-thirds point of the palate, where tannin has marshalled in force.
