Winemaker Tasting Notes

Aroma - Intensely aromatic blackcurrant, blueberry, and mulberry fruits with nuances of tobacco leaf and spearmint integrated with subtle oak spice.

Palate – Voluptuous and rounded palate, dark berry fruit, integrated seamlessly with spicy oak and hints of chocolate. Well balanced acidity and velvety tannins are complimentary to the intensity and exceptional length of fruit.

Winemaking - De-stemmed to a combination of open and static fermenters, Left on skins for between 6-8 days and pumped over 2-3 times per day. Pressed off skins directly to oak to finish secondary fermentation. Aged for 12 months in 10% new and 90% older French Oak before bottling. Vineyards - Selected from multiple sites through the McLaren Vale region, each displaying a unique site character which integrate well to form the final blend. Willunga area offers fruit with dark berries and hints of fennel with chewy tannins while McLaren Flat offers lifted floral notes and finer tannins and Blewitt Springs offering blueberry fruits and delicate structure.
