Description

Made from dry-grown fruit off our well-established Chardonnay vineyards. The grapes were whole-bunch pressed and transferred without settling or additions to a mix of barriques, puncheons and stainless steel tank. Fermentation was carried out by indigenous yeasts and the wine was left on lees for 2 years. Although quite restrained when first bottled, as it evolves this wine is looking more like a very “classic” Bannockburn. It is structured, tight, powerful and full of soil-derived crustacean characters.
