STYLE: Using premium quality fruit sourced from low yielding vineyards in the Limestone Coast, Casella’s winemaking team have developed this wine to showcase the complexity and elegance that the Limestone Coast can offer in Cabernet Sauvignon.

VINTAGE CONDITIONS: A warm and steady spring ensured excellent fruit composition and flavour development. Above average temperatures in late January spurred a slightly earlier than usual harvest. The Cabernet Sauvignon grapes were picked in mid-April at optimum Baume levels.

WINEMAKING: Following crushing the juice was inoculated with a selected yeast strain for primary fermentation, then transferred to barrel for 18-24 months. A combination of new French and American oak barrels were used, with only the best of these selected by John Casella for final blending. The final wine was then transferred to bottle with minimal filtration.

COLOUR: Intense deep crimson colour, with purple hues

NOSE: Complex aroma of light floral and spice to intense blackcurrants and hints of liquorice, with fine grained oak, cigar box and dried tobacco.

PALATE: A vibrant and full-bodied wine with plum and ripe stone fruits, overlaid with some violet and liquorice characters typical of the variety. Supple throughout, the fine grained tannin structure blends with integrated oak flavours of vanilla and dark chocolate to create a powerful yet elegant wine with a lasting finish.
