Tasting Notes

Deep crimson colour with lifted blackcurrants, spice and undertones of boysenberry. A ripe style Cabernet with a fleshy mid core, rounded tannins and focused palate length. This wine is approachable now and will mature well for at least another 7-10 years.

Vineyard Information:
From the Home Block vineyard, only a few kilometres east of the Aldinga coastline. Grown on an easterly aspect and at moderate yields (3t/acre), ensured the fruit ripened slowly, critical for producing high quality Cabernet Sauvignon.

Winemaking Notes:
Handpicked and sorted, 100% destemmed and cold soaked for 5 days at 10ºC in open-top fermenters. The fruit was left to naturally warm prior to starting fermentation. Hand plunged for 26 days before being pressed off to oak barrels for maturation. A combination of new French oak 50% and seasoned oak barrels were used to mature the wine for 18 months prior to being blended and bottled. A very hands-off and limited intervention winemaking approach ensured no finings or filtration occurred.
