Tasting Notes

Crimson colour, with lifted red cherry and plum fruit aromas underpinned by hints of dried herb and smoked meats. The palate is rounded and full bodied with a real savoury texture and focused acidity. This wine offers interest and intrigue and it will mature well for a further 7-10 years.

Vineyard Information:
A blend of three sub-regionally different Shiraz vineyards. The Oliveto vineyard located in the Sellicks foothills, the Home Block vineyard is just off the coastline of Aldinga and the Petrucci vineyard is in central McLaren Vale. Each vineyard is hand manicured, low yielding and managed sustainably.

Winemaking Notes:
Handpicked and sorted, 80% destemmed with 20% whole bunch clusters. Cold soaked for six days at 8ºC in open-top fermenters. The fruit was left to naturally warm prior to starting fermentation. Hand plunged for 22 days before being pressed off straight to oak barrels for maturation on yeast lees. A combination of new French oak (30%) and seasoned oak barrels were used to mature the wine for 18 months prior to being blended and bottled. No finings or filtration were used in the winemaking or bottling process.
