How is sauvignon blanc made?

The process for making this iconic variety differs depending on the region. For instance, a majority of French sauvignons are fermented at cool temperatures before being aged in oak barrels. This allows the flavours of the barrel to shine through without overpowering the delicate aromas and qualities of the grape itself. Other regions use different techniques, such as cold fermentation followed by aging in stainless steel tanks.

Most notably, this grape flourishes in cooler climates, as it can quickly become over-ripe and produce dull flavours and a flat acidity as a result. This is partly why you’ll find it grown in southern areas of Australia like Adelaide Hills.

Tasting notes

As one of the more common styles of white wines, it’s known to be dry or semi-dry. In fact, many people prefer this drop to be on the drier side, as it tends to have more citrus notes than other varieties. This makes it the perfect partner for seafood dishes like oysters, mussels, scallops, calamari, shrimp, lobster, crab, clams and the like, while still being able to pair well with lighter fare (like chicken or a salad).

Origins of sauvignon blanc have been cultivated since the late 1800s, when it was first planted in Bordeaux, France. Today, it remains popular throughout Europe, particularly in countries where the climate allows for year-round production – the exact reason why it’s so well-received here in Australia.

Fun fact: Sauvignon comes from the French word ‘Sauvage’, which translates to ‘wild’. This type of wine has also been enjoyed for more than 500 years.
