Discover the rich history of cabernet sauvignon wine
As one of the most popular varietals, it’s also the world’s oldest known grape. It was first cultivated by French monks as early as the 12th century, but it wasn’t until the 18th century that it began to be widely planted throughout France.
Today, it remains the second most important red grape grown in Europe after merlot. In fact, over 80% of all red table wines produced around the globe today use cabernet grapes.
This variety has become synonymous with quality thanks to its rich, full body and distinctive berry flavours. Meanwhile, its high tannins make it perfect for aging, which gives many bottles their characteristic dark colour.
Tasting notes
As a dry red wine, cabernet sauvignon is known for its bold colour, tannin and fruity notes. Typically featuring blackberries, plums and spices, these characteristics can vary depending on where they were grown.
Often described as having blackcurrant aromas and flavours that range from light to medium body, it’s known for being smooth and easy to drink. Some bottles have hints of chocolate, vanilla, tobacco, cedarwood, and even minty herbs. The best examples will show all these characteristics without overpowering any flavour.
While there are several subvarieties within the cabs family, cabernet sauvignon is considered the standard-bearer when it comes to producing fine results.
What to use it for
This versatile variety pairs well with just about everything – especially seafood dishes like salmon, shellfish and scallops. You’ll find it works equally well with poultry, beef and pork dishes, though it does tend to overpower other foods. If you want to try pairing it with dessert, opt for cheeses such as Gouda, Camembert and Parmesan.
