How much do you know about the tequila you buy?

There are a lot of rules around what can and can’t be called a legitimate “tequila”. Just like Champagne and cognac, in order to call this drink tequila it must be produced in one of five regions in Mexico – Guanajuato, Michoacán, Nayarit, Tamaulipas or Jalisco. The vast majority of tequila comes from Jalisco.

The other prerequisite to being able to classify this spirit as a tequila is that it must be at least 51% derived from the blue agave plant. Some varieties on the shelf are 100% blue agave, whereas the cheaper alternatives tend to contain a lower percentage.

Now, what about the flavour? Just like wine, the terroir has a strong influence on how a tequila tastes. As a general rule of thumb, Highland (Los Altos) tequilas tend to have grassier and sweeter flavour profiles, while Lowland (El Valle) tequilas are usually earthier and have a more mineral quality to them.

You might have noticed that the colour of tequila can differ greatly between varieties. Blanco (also referred to as silver) and Joven (or gold) tequila are the two youngest types of tequila – they’re usually unaged. Reposado tequila typically comes at a higher price point than Blanco and Joven because it’s aged in barrels for at least two months, often up to a year. Añejo is aged between one and three years, and Extra Añejo (considered top shelf) is aged three years or more.
